Pacific’s Edge at Hyatt Carmel Highlands will help ring in 2026 with a lavish New Year’s Eve celebration, featuring a chef-driven five-course prix fixe dinner followed by a sophisticated Black & Gold Gala.
Dinner reservations begin at 5 p.m., with the unique experience priced at $250 per person, inclusive of tax. Guests may also enjoy a premium wine pairing for an additional $115 per person. All dinner reservations include complimentary entry to the gala.
Executive chef Chris Welenc’s menu showcases refined coastal cuisine and exceptional seasonal ingredients, served in the renowned dining room perched above the Pacific Ocean.
The evening begins with classic Oyster Rockefeller as an amuse bouche, followed by a choice between a Farmer’s Market Salad (baby gem lettuce, heirloom carrots, citrus-braised beets, cashew cheese and tarragon-infused citrus vinaigrette), or a Cream of Truffle and Mushroom Soup. The appetizer course features Pan-Seared Scallops with poached white asparagus and caviar beurre blanc. Entrée selections include Beef Wellington with Truffled Yukon Potato Purée and Mushroom Jus, Butter-Basted Twin Lobster Tails with Grilled Corn Polenta and Broccolini, or a vibrant Vegetarian Stuffed Zucchini with sautéed farmers market vegetables.
Dessert concludes with an elegant Mille Feuille layered with raspberries, blueberries, vanilla bean crème fraîche, maple cream honey sauce, and cinnamon ice cream.
Following dinner, the Black & Gold Gala will take place from 8 p.m. to midnight. Gala tickets are available separately for $100 per person, and include a live band, two beverages, a midnight Champagne toast, and an enhanced late-night bites-and-dessert station. Guests are encouraged to dress in festive black and gold attire to complement the evening’s theme.
